Woolworths Smoky BBQ Chicken & Corn Recipe


Team marinated chicken drumsticks with corn cobs and potato wedges for a simple midweek meal where the oven does most of the work for you.

Prep - 5 Minutes
Cook - 40 Minutes

Serves - 4

INGREDIENTS

  • 1/2 cup barbecue sauce

  • 2 tsp ground paprika"

  • 2 cloves garlic, crushed

  • 1.4kg Woolworths RSPCA approved chicken drumsticks

  • 4 washed white potatoes, cut into wedges

  • 500g frozen corn cobs

  • 1 tbs extra virgin olive oil

  • 1 red onion, quartered

  • 1/4 bunch coriander, sprigs picked

METHOD

Step 1 - Preheat oven to 230°C/210°C fan-forced. Combine sauce, paprika and garlic in a large glass bowl. Add chicken and turn to coat.

Step 2 - Arrange chicken, potatoes and corn on a large baking tray. Drizzle with oil and bake for 40 minutes, adding onion halfway through cooking, or until chicken is cooked and potatoes are golden.

Step 3 - Serve topped with coriander.
