Ingredients
1.5kg chicken drumsticks
0.5kg red washed potatoes, cut into wedges
1 tbs extra virgin olive oil
2 tbs dijon mustard
1 red onion, cut into wedges
2 lemons, 1 lemon zested and juiced, 1 cut into rounds
1/2 bunch continental parsley, leaves picked
Method
Step 1 - Preheat oven to 200°C/180°C fan-forced. Line a large baking dish with baking paper.
Step 2 - Add to a large bowl chicken drumsticks, potato, oil, dijon, onion, lemon zest and juice. Season well and toss to combine. Transfer to baking dish.
Step 3 - Bake for 30 minutes. Remove from oven, toss pieces, and add lemon rounds to dish. Bake for a further 30 minutes, or until drumsticks are golden and cooked through and potatoes are tender. Top with parsley. Serve.
